Mustard green bites are a surprisingly, lively green addition to the brunch table.
Makes 6-7 patties
In a large pot, bring 6 cups of water to a boil and add Curly Mustard Greens. Boil for 12 minutes, stirring to cook greens evenly. Drain and squeeze out excess water.
While greens are boiling, whisk eggs, Parmesan cheese, flour, mustard seed, garlic powder, onion powder and black pepper in a bowl. Stir in greens and add 1 Tbsp bread crumbs (mixture should be loose, but not pourable). Add additional bread crumbs if mixture is too thin.
Shape mixture into patties. Place remaining bread crumbs in a shallow bowl and coat patties on each side.
