Euro Greens and Italian Sausage Pasta

This flavorful blend of kale, chard, mustard and turnip greens paired with Italian sausage and tomato sauce in a delicious pasta dish.

Serves 4-6


Ingredients

  • 1 (10 oz) bag Cut ‘N Clean Greens Euro Greens
  • 1 Tbsp Oil
  • 1 lb Italian Sausage, sliced on a bias
  • 3 cloves garlic, minced
  • 1 (24 oz) jar Tomato Pasta Sauce
  • Sea Salt and Fresh Ground Pepper to taste
  • 1 lb dried Rigatoni (or your favorite pasta)
  • Garnish with fresh basil, grated Parmesan cheese and red pepper flakes

Directions

In a large pot of boiling salted water, cook sausage. Remove sausage from pot, cool and slice on the bias. Use the same water to cook your pasta based on the cooking instructions on the package.

In a large sauce pan over medium-high heat, add oil. Add sliced sausage and brown. Add garlic and sauté until golden brown. Add tomato sauce, fold in Euro Greens and season with salt and pepper to taste.

Toss pasta with sauce. Garnish with fresh basil, grated Parmesan cheese and red pepper flakes.
